I love love love Brownies they have to be my favourite chocolate cake with there soft centre chocolate goodness. I often make brownies once a month the kids love them i love them there gooey centre is to die for with the milk choc and white choc chips i cant stop dribbling thinking about it. Baking up a batch of brownies takes no time at all and they are for real better than a box mix.
350g light or dark brown sugar
6 medium eggs
1 tsp vanillia extract
1 tsp salt
100g white choc chips (or use a block of chocolate and cut into pieces)
300g dark chocolate
350g plain flour
100g plain chocolate chips
Wash hands, Pre-heat oven to around gas mark 3/160 degrees once done prepare the baking tray to cook the brownie in. i used a brownie tin i had, spray with fry light or place a baking sheet inside the tin
In a large bowl of your choice or your stand up mixer mix in the soft butter and sugar mix well. for around 2-3 minutes or just until it becomes pale and fluffy.
Add the eggs one at a time mix up again then add the vanilla extract and salt.
Either in the microwave or over a pot of hot water melt the 300g chocolate if melting in a microwave do these in 30 second bursts until melted making sure to stir each time.
set it aside once melted and cool a little, then pour the melted chocolate into your mixing bowl and gently fold in together coating the mix in melted chocolate.
now add the flour with your mixer still running if using a stand mixer on the slowest setting once done use a wooden spoon just to give it one last stir to make sure everything is mixed well. Then add the chocolate chips and stir again
Now pour the chocolate batter mix into the tin you prepared earlier and bake on the middle shelve of your preheated oven for around 30-35 mins or until the top of the brownie looks crunchy.
